Sarah Bakes: Peeps Shortbread Cookies

Jeff likes to make a baked good to take to work on Mondays since it helps him build his Instagram food picture portfolio (and probably also does some good for team morale). He was unavailable to make a baked good last Sunday, so I decided to make something for him instead. I was inspired by all the Easter candy that’s been floating around and decided to make some shortbread cookies shaped like Peeps bunnies.

I used a shortbread cookie recipe Jeff has used previously from Paper Street Parlour (minus the lemon). We didn’t have an appropriately shaped cookie cutter, so I cut a template using Design Space and my Cricut. The template was cute, but I definitely bit off more than I could chew by choosing to cut each cookie by hand this way. The cookies baked up nicely (though a bit large - I should’ve made the template a bit smaller) and smelled amazing. I iced them using a recipe from All Recipes. The end result was incredibly cute and they went over well with Jeff’s coworkers, but I’ll be choosing something lower effort the next time I bake for Jeff.
